Viand takes its name from a Latin phrase meaning “delicious dish.” Indeed, the restaurant takes an innovative approach to its menu, infusing dishes with Latin, Asian, Caribbean and Southern touches. The cornmeal-breaded calamari is served with sweet chili, basil aioli and Thai peanut sauces while the tender pork tenderloin is dressed with a shag bark cider and anjou pear/blueberry compote. Steaks are marinated in a 18-spice house recipe and the guava-glazed salmon arrives on a Jack Daniels bourbon plank. Executive Chef Chris Eley ensures each dish has been thoughtfully crafted in their open kitchen.
Viand’s signature martinis further reflect the creative approach to cuisine. Each martini is enhanced with a complementing garnish, from drunken cranberries to blue-cheese stuffed olives. Viand also boasts an extensive wine list and flights of vodka, scotch and tequila. Daily drink specials include Martini Tuesdays and Wine Wednesdays. The bar area features three flat screen televisions for watching sports.
Viand also serves a full breakfast. Beginning at 6:30 am, you can sample a buffet as well as morning classics such as eggs benedict and blueberry buttermilk pancakes.
