Each day for Chepé begins at the markets, where he hand-picks the finest of the day's meat and produce offerings. Many of the ingredients he buys are used to create our daily specials. Back at the restaurant, Chepé directs and supervises every aspect of the kitchen activity, ensuring favorite recipes are followed to the letter.
